It is a popular dish in India and Pakistan. Whether it’s a marriage or a festival, this is highly enjoyed as a very sophisticated, delicious dessert.
Ingredients for the dish and how to prepare it:
First, take carrots and wash them properly with clean water.
Peel the carrots and put them all in a large tray. After that, grate carrots using grater.
Cook the carrots in the pan until they are soft and water in them evaporates. Now heat up sufficient enough butter or desi ghee in a heavy based pan. Add grated carrots to it. Cook it for 20 to 30 minutes. Keep the flame medium.
Now add milk to the halwa. But first, reduce milk to half by boiling it, while you stir it from time to time. While you add milk to the halwa, add crushed cardamoms as well to bring out the flavour. Cook until the milk is fully absorbed in the carrots and you see ghee or butter coming out. Stir it from time to time to prevent it from burning or sticking to the pan.
Add sugar to halwa after that, and keep on cooking the carrots with sugar until the color of carrots becomes deep rand ghee/butter starts to come out
Before dishing out the Gajar Halwa, add your chosen dry fruits to the halwa.
Dish it out and put some more fine chopped almonds and pistachios on top of the fresh-made Gajar ka Halwa.
